History
of La Liviniere
| The name of
the village itself is the major identification for
this young appellation. The Romans named this area
Cela Vinaria as it was particularly well adapted
for the culture of the vine. Classified as AOC
Minervois in 1985, the vine growers have always
been conscious that their terroir, (the soil,
climate and local conditions of production) were
quite exceptional. They have worked hard, united
under the symbol of the La Livinière village
bell-tower to develop wines of distinction which
express the specific nature of this particular
Minervois terroir.

In the heart of the Minervois, in a natural area known as the Petit Causse on the lower slopes of the foothills of the Montagne Noire, it covers six villages : Azillanet, Azille, Cesseras, Felines Minervois, La Livinière and Siran.

The specific terroirs and landscapes of La Livinière area can be considered as a miniature form of the larger Minervois area where all the extreme factors are moderated. Area of dry scrubland (" Causse "), the dominant rock and soils are compact limestone and marl.
Situated between the Serre d'Oupia and the hills of Laure-Minervois, the La Livinière appellation is a very dry sector where rainfall represents between 400 and 500 mm p.a. with significant hydrous deficit during the summer months. The particularly high daytime heat in this zone is attenuated by low night time temperatures induced by fresh air flowing down from the surrounding peaks.
Syrah, Mourvèdre and Grenache must account for at least 60% of the vineyard surface used for the appellation in La Liviniere, with a possible complement of Carignan, Cinsault, Terret, Piquepoul and Aspiran.
Resulting from long traditional fermentations, often with unbroken grapes, to be entitled to the appellation of La Liviniere, these wines must be aged at the property in tanks or barrels until the 1st of November of the year following that of the harvest, that is to say a period of more than 15 months.
A family estate, Domaine Piccinini was born in 1991, when Jean-Christophe settled in after getting professional qualifications at Montpellier University.
His father, Maurice Piccinini, for over 35 years had contributed in winning the Minervois wines and particularly those from La Livinière their outstanding reputation.
The vineyards are located in the North-East of Minervois, under Mediterranean influence, on the "Petit Causse", the foothills of the "Montagne Noire", and enjoy exceptionnal sunshine.

For a number of years, Jean-Michel Cazes, owner of Chateau Lynch-Bages in Pauillac, has been producing wines in the Languedoc.He was seduced by the beauty and potential of La Liviniere to start making his wines.
In 2002, he acquired 2 neighbouring properties which gave him a Domain of 150 ha of which 50 ha are vines and 25 ha are Olive trees.

The winery, in the heart of La Liviniere, of Château Sainte Eulalie, established in the last century, is the traditional Languedoc "campagne", (term used for an estate including the master’s house, employees’ lodgings, the cellars, and surrounding vineyards).
In February 1996, Isabelle & Laurent COUSTAL, launched into the captivating adventure of redeveloping the Chateau Sainte Eulalie and its wonderful estate in La Liviniere.

Domaine Saint Germain
This vineyard belongs to Mr Pouthie, whose son, Roger Pourthie is the President of the Cave in La Liviniere. The Domain St Germain is found on slopes of La Liviniere surrounded by Pine trees, where parcels of vines alternate with these trees. It owes its name to a very pretty Roman Chapel of the 12th C which was restored, and where, in the month of May each year, on the day of St Germain, a pilgrimage and a party is organized to honour the Patron Saint of this Chapel.

Borie de Maurel is one of the leading domaines in Minervois, and in particular the new Minervois cru La Liviniere. Its proprietor, Michel Escande, has taken on the presidency of the sub-appellation, located in the northwest of Minervois, and he leads a group of over twenty winemakers committed to producing wines of quality. It is no surprise that Escande has taken on such a leading role in the development of the Minervois; it is reported he started making wine at the age of twelve! Le Clos Centeilles
Above all, Centeilles is a viticultural heritage whose hazards of family inheritances, joining cooperatives, etc. never succeeded in obliterating its genius. Therefore, since the 1990 wine-harvest, Patricia and Daniel Domergue struck, like anybody else, by the obvious predestination of this place to give birth to great wines, decided to link its past to its future in an exciting present : the rescuing of a great forgotten terroir. One thing is sure though, enjoying the peace of Centeilles without even talking about wine, is already very valuable in itself.
